Flapjacks

250g Butter / 250g Sugar / 10 tbsp Honey or Syrup / 450g Oats / 2 tsp ground ginger (optional)

  • Melt butter, sugar, and honey in pan, add oats and stir until mixed in, add fruit or other bits (chopped nuts, choc chips etc)
  • Place into shallow baking tray, put in oven
  • Bake until golden, cool and cut into squares

This is double quantity and will make lots of small pieces or big chunky ones!!!! Great to take on bike rides!!!


Chicken Broth

A great recipe for left over chicken!!

1 chicken carcass / 1.4 litres of water / 2 onions-sliced / 2 carrots-sliced / salt & pepper / Rice

Place the chicken carcass into a large saucepan, and cover with the water. Add the prepared vegetables. Boil and simmer for 2 hours. Remove any excess fat and remove the carcass. Add the rice and simmer until the rice is cooked. Adjust seasoning to taste. Extra vegetables can also be added to your liking.
